We were recently given the amazing task of creating a dinner for a small group in a big space – 25 people on a soccer field to be exact! We wanted to embrace our natural location, and were so successful in creating an inviting centerpiece that a bumblebee even came by seeking nectar! (See the picture – you might be able to spot the bee!)
We often refer to Vancouver as being a culinary mecca, and while you may expect this of our restaurants, you don’t always expect it when you are feeding large groups in convention centres or stadiums, but that is not the case here!
For the guests themselves, Centerplate, the official caterer at BC Place Stadium (as well as the Vancouver Convention Centre and Whistler Conference Centre) really brought us a winning meal. It began with this Chilled Sole Foods Sweet Pea Soup, made from peas the Chefs had crossed the street to Sole Foods Garden and picked that morning! Now this is what we are talking about when we say food should embrace “FLOSS” principles – Fresh, Local, Organic, Seasonal, Sustainable. Guests also got to enjoy delicious poached BC spot prawns with French radish sprouts and chili oil amongst other gastronomic delights.
